Executing pristine oysters, lobster medallions, and raw ocean delicacies in the air.

Serving fresh ocean delicacies, such as oysters on the half shell, wild langoustines, or tuna tartare, represents the ultimate expression of freshness and culinary daring. Raw bar service conveys instant coastal luxury, but it is also the most temperature-sensitive offering in VVIP gastronomy. Because shell seafood and raw fish degrade rapidly when exposed to ambient room temperatures, executing a flawless raw bar requires strict cold-chain discipline, specialized ice presentation, and immaculate galley hygiene.

The foundation of pristine seafood service is thermal control from the moment catering arrives at the aircraft. Raw oysters, clams, and crudos must be kept strictly at 0°C to 2°C (32°F to 35°F). When receiving live shell oysters or pre-shucked seafood platters for flights departing from Paris–Le Bourget (LFPB), verify that shell items are packed flat on wet ice or specialized gel packs to preserve their natural liquor. Never allow bivalves to submerge in fresh melted water, as fresh water dilutes their ocean salinity and ruins their natural texture.

Building an elegant ice bed in the galley is both a visual art and a functional necessity. Standard ice cubes melted unevenly create an unstable surface where shell seafood can tip over and spill juices. Utilizing crushed or shaved ice tightly packed into silver, glass, or insulated acrylic trays creates a firm, sculpted foundation that holds oysters and lobster tails securely in place. Lining the tray base with seaweed (such as fresh rockweed or wakame) adds an authentic coastal aesthetic while absorbing excess moisture.

Accompanying condiments should be light and acid-balanced to enhance rather than mask the seafood’s natural sweetness. Present traditional mignonette sauce made with aged red wine vinegar and finely minced echalion shallots in small glass carafes, accompanied by wrapped halves of Meyer lemons or Yuzu wedges to prevent seeds from falling onto the plate. By combining rigorous food safety standards with artistic ice presentation, Corporate Flight Attendants turn a delicate raw bar into a memorable, fresh gastronomic event.
